How To Make Your Own Protein Pancake Mix!

Waffles and Pancakes are some of our favorite breakfast foods–especially after a long training session or run.  Recently, I started making my own pancake/waffle mix from scratch.  We’ll  update you if any tweaks ever need to be made, but so far this recipe’s a real winner!!

DIY Protein Waffle/Pancake Mix:

  • 1 cup almond flour (run through a food processor for a more fine texture)
  • 1 cup whole wheat flour
  • 1 cup coconut flour
  • 1 cup oat flour (If you can’t find oat flour, use whole rolled oats or run the oats through the food processor to make a fine flour-like texture)
  • 1 cup of protein powder (we personally use a vegan chocolate protein powder, but feel free to use your own favorite)
  • 4 tablespoons of baking powder

Mix all dry ingredients together until fully mixed, store in an airtight container, and use as needed.

When I use this mix, I prefer to add an egg and some milk.  Next, stir until the consistency is on point.  I really just go by look and don’t use exact measurements.  If you’ve made pancake or waffle batter before, you’ll know when it looks right.

Note: Eggs are not necessary and you can substitute milk with water.   

When making pancakes (or waffles), I also normally smash up a banana or 2, and add fruits and/or nuts into the mix.  This is a great way to get proper nutrients to start your day, and also provides endless options of pancakes and waffles to create.

While we personally prefer to save this protein pancake mix for after training sessions, we do have a list of other healthy breakfast ideas we turn to before a race–they never fail to disappoint!
