I’m personally a lover of all-things-pumpkin, but it can be difficult to find recipes that aren’t dessert when this time of year hits.
I’m also not inclined to turn my oven on quite yet because I live in Phoenix. It’s October 12th, and our high is supposed to be 92 today. It doesn’t really cool off until after Halloween so baking up desserts just doesn’t sound appealing quite yet.
Enter this smoothie! Cold, refreshing, fairly nutritious, and tasty!
(Don’t get me wrong… there’s a time and place for a boozy pumpkin shake to celebrate an OCR finish, and I’ll drink this one all day long!)
If you’re looking for more healthy pumpkin ideas, give this smoothie a try. I think it would be great after a hard training session, personally. The maple syrup and spices add just the right amount of sweetness without being overkill.
INGREDIENTS:
- 1/2 cup canned pure pumpkin
- 7 oz. 2% Greek yogurt (or regular plain yogurt)
- 1/2 cup water
- 1/4 of an avocado
- 2 Tbsp. ground flaxseed
- 1 Tbsp. maple syrup
- 1/2 tsp. pumpkin pie spice
- Ice (optional)
DIRECTIONS:
Blend until it’s creamy, enjoy, and repeat as desired. It’s pumpkin season!
